Eggplant Parmigiana

 Eggplants
Cut off tops,  peel, and slice vertical
although I did cut this one horizontal and it tasted just fine
Place on salt and peppered cutting board
Salt and pepper on top, let sit for 20-30 min to sweat
Once they have sweat, dredge each piece in flour
then dip in eggs

and then bread crumbs
Should look something like this
Then place in fryer, or deep pan
 and place a metal rack on top to submerge slightly
fry for about 2 minutes
Dramatic change in color and texture
Once you fry all the eggplant pieces, place them on a paper towel until later
 Grab your tomato sauce, or make one quickly, you will also need some mozzarella, parmesan, and ricotta if you want/have it
Take an eggplant piece and top with sauce
then cheese
then eggplant
another time
 and another
one more on top, then bake at 375º/400º until cheese in golden brown
should take about 15-20 min in the oven
 Very good stuff though, for such an odd plant
