Manicotti & Chicken Cannelloni

Chicken Cannelloni

Flour
Salt
Eggs
Mix in middle with water/milk
Mix
Take out
Knead just until combined, then cover and let rest
Ricotta
Garlic
Salt + Pepper
Chopped Italian parsley
Grate some parmesan
Toss it in
Mix
Add egg
Mix and set aside, preferably in the fridge
Knead rested noodle dough, add flour if its sticky
Cut into quarters, then roll out
Fold it over itself a few times until smooth
Roll out all dough then cut into cotti sized tubes
Start to boil water
Chicken meatball ingredients (grind all together) + breadcrumbs
Start making a tomato sauce, or grab a jar (up to you)
Boil pasta
Place filling in tube

Chicken Cannelloni
Place tomato sauce on bottom of pan, then top the noodles with more
Bake for about 20 minutes, then add cheese on top and bake for another 5-7 minutes.

Recipe

Noodles
2 Cups Flour
Pinch of Salt
2 Eggs
1 Tbs Milk/Water

Cheese Filling
2 cups Ricotta
2 Cloves Garlic
tsp Salt
tsp Pepper
1/4 Cup Italian Parsley
1/4 Cup Parmesan Cheese
1 Egg

Chicken Meatballs
2 Chicken Breasts
2 Garlic Cloves (Roasted)
Approx. 1/4 cup Parmesan
1/8 Cup Parsley
1/4 Cup Breadcrumbs
Salt + Pepper

Tomato Sauce
2 Tbs Olive Oil
3 Cloves Garlic
1/4 Cup Red Wine
1 Can Crushed Tomatoes
1 Can Tomato Paste
Fresh Basil to Taste
Salt to Taste

Bake in casserole pan at 400ยบ for 20 min, then top with mozzarella and parmesan cheese and bake another 5-7 min. Serve with garlic bread.
